Bought the Bacon & Bleu Cheese salad kit again. Chucked out the croutons, added a lot of my own bacon bits and three chopped hard-boiled eggs. Used all the salad dressing this time. Very filling!
I added leftover spinach to my ground beef/chorizo meat sauce, made 90-second bread and another salad kit (Avocado Ranch).
One of my favourite meals is a quick and easy salad made with Romaine lettuce, thinly-sliced red onion, well-seasoned cold steak sliced against the grain, and a simple salad dressing of equal parts mayo and salsa.
Steak with cajun spice rub done in the Instant Pot Duo Crisp air fryer, Mexican cauliflower rice, spinach with a pat of butter. Also made a cup of decaf coffee with coconut milk, a dash of salt and one packet of stevia. Wow, it was delicious!
Steak cooked in ghee, mushrooms, spinach with butter. Simple, quick, easy… my favourite kind of meal!
Forgot to take meat out to thaw yesterday, so made a three-egg omelette with mushrooms, spinach, bacon and half a parmesan cheese wrap; served with Mexican cauliflower rice. Don’t judge; I’m not a very good omelette maker!
Mackerel fillets cooked in ghee with crispy skin used as garnish (it’s the first thing I ate!); Mexican cauliflower rice with onion, garlic, tomato paste, spices and mixed veggies; spinach with a dab of butter.
Homemade meat sauce served with a chopped salad kit (Bacon & Bleu Cheese). I threw away the croutons and only added half the dressing, then I added a bunch of my own bacon bits to the meager amount the kit came with.
Costco’s Greenfield brand sausage patties, spinach and mashed rutabaga (Swede). Simple, quick and easy! Don’t make low carb hard. It’s not!
