Leftovers! Ground meat “muffins,” cabbage in tomato sauce, half a small sweet potato, parsnips. (Sweet potato and parsnips are carby, so probably not suitable for weight loss.)

Another quick and easy meal. Southwest Salad Kit (Walmart) with diced rotisserie chicken and hard-boiled eggs. A wee bit spicy and really yummy! Low-carb meals don’t have to take a lot of time or fuss!

Four ground meat “muffins,” cabbage cooked in the Instant Pot with diced tomatoes and seasonings. For a very rare dessert I had a sugar-free milk chocolate bar (16 gm of total carbs). Delicious!
More Instant Pot cabbage. This time with a can of diced tomatoes with garlic and olive oil, as well as chicken stock, garlic, ghee, thyme, salt. Served with my favourite English Banger Sausages (from my local Save-on-Foods). Wow, I really enjoyed this!
Asian Salad Kit on sale at Walmart. I added diced salami sausage and chopped eggs. And I actually used the crispy, carby wonton noodles and the seed-oil-based salad dressing that came with it. What?! Yep, living on the edge in maintenance mode! LOL (It was really yummy!)
