Mackerel Fillets, Mexican Cauliflower Rice, Spinach

Mackerel fillets cooked in ghee with crispy skin used as garnish (it's the first thing I ate!); Mexican cauliflower rice with onion, garlic, tomato paste, spices and mixed veggies; spinach with a dab of butter.
