Bacon and Eggs

Simple works really well on a low-carb or keto diet.

Here we have scrambled eggs cooked in butter (don't over-cook, they should be a little moist, not dry!), air-fried bacon purses (i.e., folded bacon strips) and red pepper slices. Incredibly good, so simple, so easy! And it only takes a few minutes to make! No excuses! 

Note: the bacon was cooked the previous day and just zapped for a few seconds in the microwave.

Tip: If you keep red pepper slices and pre-cooked bacon in the fridge, this meal will take about five minutes to make!
