Half a rotisserie chicken, red peppers. I ate all of this except about 1/3 of the chicken breast. Note: I always save the bones and gristle from rotisserie chickens for making stock! This is one way to keep low carb simple… and inexpensive! Rotisserie chickens are often loss leaders for places like Costco.
