Had some brisket and sausage stew thawed, so I just heated a bag of frozen cauliflower rice with mixed veggies, dumped the stew on top and Bob’s your uncle… a late lunch!
Romaine lettuce, sweet peppers, red onion, baby tomatoes, cucumber, olives, leftover sausages, hard-boiled eggs, salsa mayo.
Twisted bacon, beef meat bars, sausages, steamed spinach with butter, poached eggs, baby tomatoes. A nice variety of flavours today.
Turkey thigh, chicken thigh, spinach with a dab of butter, mini peppers, English cucumber. There was a second chicken thigh, in case I was still hungry, but I couldn’t eat it. A very satisfyng meal.
Turkey thighs and leftover Greek salad (with tofu instead of feta cheese). I also made turkey gravy using Knox gelatin, but it was quite runny, so I’ll try to sort that out for tomorrow’s meal.

Zucchini fritters fried in beef/bacon fat; Dr. Berry’s bacon chips; baby tomatoes. These fritters were really delicious and definitely crispier than my previous batch, but I’m still not quite there with the crispy factor. Maybe I’ll try the air fryer next. Reminder: I am on maintenance.
