Salad, Egg Bites and Bacon
A simple meal since the salad was made ahead. I heated the bacon and the bacon/cheese egg bites (Kirkland brand from Costco) in the air fryer. The salad looks kind of muddy in the photo as I mixed in some leftover sweet and sour red cabbage which always turns whatever it’s added to pink!

These lovely steaks were on sale at Safeway. I air-fried them and they were so tender and delicious! I also made some parsnip fries in the air fryer. They were amazing! The parsnips are not particularly low carb, but they are just fine for someone on maintenance.

A delicious Instant Pot meal. Simple, quick and easy! Sauerkraut, onions, garlic, bay leaf, salt and pepper, a cup of water and chunks of sausage. Pressure cook for 15 minutes (add 10 minutes natural release). I used this recipe. Here’s another similar dish. Note: I used only 1/2 tsp of salt.
