Chicken Congee: Experimenting with Rice on a Low-carb Diet (Recipe)

Chicken congee! Lots of chicken and broth... and rice, too, of course. Topped with a little sesame oil, chili oil and soy sauce. I am starting to experiment with a small amount of rice in my low-carb maintenance life. [Not a very interesting photo, but a really tasty meal!]

This is the recipe I based my meal prep on. However, I added a lot more chicken (4 whole chicken legs) and also used chicken stock instead of water, so mine is a very rich, meaty version!
