Ground Beef, Asian Cauliflower Rice, Eggs

Another easy low-carb meal, this time with ground beef, eggs and cauliflower rice. I used a basic recipe (link below) and tweaked it to suit what I had on hand. I substituted jarred ginger and frozen Asian cauliflower rice. I also sautéed a minced shallot with the beef. I topped the meal with toasted sesame seeds as I didn't have any green onions.

Note: I reduced the salt in the recipe significantly... and I'm glad I did! I would say use 1/4 tsp. salt. You can always add more salt at the table.
