Instant Pot chicken gizzard stew with homemade chicken stock, celery, Romaine lettuce, seasonings. Avocado on the side. I really wanted to like this stew since gizzards are cheap, but it was just okay. Basic recipe came from Ketogenic Woman: https://ketogenicwoman.com/chicken-gizzard-soup/
Beef meat bars, Costco meatballs, Brussels sprouts, a little chili sauce on the side. Easy and quick since the meat bars and meatballs were part of yesterday’s meal prep.
Got home from shopping around 2:30 and prepped 12 mini beef meat bars and 24 pork meatballs in the air fryer. The pork meatballs are from Costco. Decided to eat some of the meat bars and meatballs for a late lunch. MEAT BARS RECIPE: Beef meat bars are so simple: use extruded meat in the…
Asian Salad Kit (it was on sale) mixed with canned Kirkland chicken from Costco. Very quick and easy meal, basically just assemble and chow down! [Be aware that the fixings and dressings that come with salad kits can be high carb and usually contain questionable oils, like canola, safflower, etc.]
Instant Pot meat stew (beef finger meat, some kind of sausage), Sweet Kale Salad Kit. I only buy salad kits when they’re on sale. They use questionable seed oils in the dressings so I don’t want to eat them very often. I used 1/2 the dressing for the whole salad and only ate half the…
Almost the same as yesterday’s meal. Three pork loin chops (one is buried under the salad), two pork meatballs (Walmart); Romaine lettuce salad with red onions, olives, 1/2 an avocado, salsa mayo. Another delicious meal!
A truly delicious meal of tender air-fryer pork chops and a Romaine lettuce salad with red onions, pimento-stuffed olives and salsa mayo. Very simple, very enjoyable!
Pork meatballs (Walmart), bacon, steamed Brussels sprouts, butter, chili sauce.
I made dairy-free waffles with coconut flour, Knox gelatin and eggs (not that great, I’m afraid). I ate them with some deli meat, bacon, mayo and carrot sticks (I’m on maintenance so a few carbs here and there are okay).
