Made fried rice from a package of coleslaw with added red onion, bottled garlic, seasonings and rice that was cooked and cooled for 24 hours (resistant starch). Served with three English banger sausages from Save-on-Foods here in Vancouver.
Stir-fried leftovers! Canned luncheon meat, eggs, rice and broccoli. Definitely not low carb, but weight is still stable.

The very simplest of low-carb salads might be this one; just Romaine lettuce, diced luncheon meat and salsa mayo.

A big salad with minimal ingredients: shredded Romaine lettuce, sliced red onion, diced sausages, 2 T. Ranch dressing, 2 T. Japanese dressing, splash of Balsamic vinegar, 1/2 tsp. chili flakes, salt and pepper.
A simple, quick lunch today! Steak (on sale at Walmart) and a microwaved potato that was in the fridge for a day or so (to build resistant starch). Very tasty and nourishing! I also had a small bowl of cottage cheese for “dessert.”
English Banger Sausages from Save-on-Foods here in Vancouver; fresh buns from Safeway spread with mayo; Romaine lettuce and red onion salad with salsa mayo. Simple and easy! Not low carb, but, since I only eat one meal a day, this isn’t all that high in carbs, either.
