A cute 2-duck-egg omelet with herbed cream cheese and heavy cream made in my new toy, the Dash egg cooker. Also on the plate: Havarti cheese, red pepper, cucumber. Very, very filling… and delicious! I had 2 squares of 90% dark chocolate for “dessert.” Total carbs ~16 grams
Crispy chicken thighs, breakfast sausages, mashed celeriac, gravy, baby tomatoes. Delicious… and filling! Carbs are a little higher today: ~25 gms.

Cooked prawns (Walmart), cucumber, red pepper, 2T seafood sauce, 1 cup 4% cottage cheese with English Toffee Stevia. What a lovely summery meal this was… and very filling! Checked carbs for fun again: ~19.
Four breakfast sausages, mashed celeriac, gravy, red pepper, cucumber. Because the sausages didn’t have a lot of protein, I also had 1/2 cup 4% fat cottage cheese. Total carbs: ~19. Just decided to count carbs for fun today.
“Everything” Salad Kit (on sale at Walmart). I threw away the mini-bagel croutons. I added two hard-boiled eggs, four slices of crispy bacon and seven thin slices of peppercorn salami. The salami made the salad a bit spicy, which was great. A delicious late lunch. I usually eat at noon, but it was about 2:15…
