Quick Deli Platter: Peppercorn salami, Havarti cheese, red pepper, cucumber, olives, celery with cod liver pâté. If you’ve never tried cod livers, you’ll be pleasantly surprised. They are soft and silky… and taste like mild tuna! Lovely!
Shrimp coleslaw: ~3/4 pkg. of coleslaw mix, 2 green onions finely sliced, 1 pkg. cooked prawns, 1T mayo mixed with 1T seafood sauce, s&p, a sprinkle of sweetener (I used stevia). Mix well and taste for seasoning. This was absolutely delicious!
Sunflower Crisp Salad Kit (on sale at Walmart) with added diced deli meat, feta cheese and apple (I have added a tiny bit of fruit now and then on maintenance).
