Chicken Thighs, Cauliflower Rice with Scrambled Eggs

A nice quick and easy meal if you use frozen Asian Cauliflower Rice. I scrambled a couple of eggs and set them aside and then sautéed 1.5 packages of frozen Asian Cauliflower Rice with 1 tsp. of minced garlic. Once the rice was lightly browned, I added a mixture of 1 T. soy sauce, 1 tsp. sugar (or sweetener of your choice) and 1 tsp. sesame oil. Once that was all combined, I served it with a couple of chicken thighs that I reheated in the air fryer. My plate is holding about half of the rice mixture; I will make the other half part of tomorrow's meal.
