A big salad is such a versatile low-carb meal! This winter salad has Romaine lettuce, seasoned shredded chicken breast, a small amount of sweet potato, tomatoes, red peppers, red onion, salsa mayo, Aleppo pepper flakes and salt. I warmed up the chicken and sweet potato in the microwave.

A simple meal since the salad was made ahead. I heated the bacon and the bacon/cheese egg bites (Kirkland brand from Costco) in the air fryer. The salad looks kind of muddy in the photo as I mixed in some leftover sweet and sour red cabbage which always turns whatever it’s added to pink!

A delicious Instant Pot meal. Simple, quick and easy! Sauerkraut, onions, garlic, bay leaf, salt and pepper, a cup of water and chunks of sausage. Pressure cook for 15 minutes (add 10 minutes natural release). I used this recipe. Here’s another similar dish. Note: I used only 1/2 tsp of salt.
