Scrambled Eggs, Bacon, Roasted Veggies and Tomatoes
This is a filling meal for those days when you are hungry, but need something simple to prepare. The root veggies and potatoes only took 15 minutes in the air fryer. The bacon was pre-cooked and heated for 30 seconds in the microwave. I scrambled the eggs and cut up a few cherry tomatoes while the veggies were roasting. Yes, there are a few roasted potatoes with the root veggies, but the total carbs for this entire meal is still only 18.2 grams! You don't have much room for more carbs after this kind of meal, so make sure any snacks you eat are pretty much pure protein, like pepperoni sticks, hard-boiled eggs, leftover meat, etc. If you want more room for carbs in snacks or in a second meal, replace the roasted veggies with a side salad.
